Our charming guest house in the heart of the Boralde Valley of Saint Chély allows you to discover the magic of Aubrac on horseback in 3 departments: Lozère, Aveyron and Cantal. Huge basaltic plateau of medium mountains (between 1000 and 1500 m of altitude), it offers a variety of landscapes each more spectacular than the other. Michel Bras, formerly a Michelin-starred chef in Laguiole, describes Aubrac as follows: "A natural fortress, a desert. Already from our guest house, you can discover on foot the village of Saint Chély d'Aubrac at an altitude of 820 m which houses a beautiful architectural heritage from the 14th century to the present day such as the Pont des Pèlerins (classified Cultural Property World Heritage of Humanity by UNESCO), the church with its double stands and its altarpiece from the 14th, the wash houses, the half-timbered houses.
This village is famous all over the world for its knives, cheese and gastronomic representatives such as the Suquet des Bras restaurant! In the heart of Laguiole, you can visit several forges that are the pride of the region and buy a knife as a souvenir, symbol of the Aveyron.
On the Place du Foirail, you can admire the Taureau de Laguiole, an imposing bronze statue of Georges Guyot which immortalizes the Aubrac breed well known for its elegance with its fawn coat, its horns in the shape of a lyre and its eyes highlighted in black, as make-up!
The Aubrac is a land of hiking and offers an infinite intertwining of paths and trails that allow you to travel the Aubrac on foot, on horseback or by bike. You can tour the Aubrac Mountains starting from Saint Chély d'Aubrac and discover first a hilly and green landscape then a more austere granite area with a little Mongolian air! Another great classic is the Compostela trail (GR65) which leads from Aubrac to Conques.
At the end of May, you can take part in the traditional festival of transhumance, which gives the departure of the herds of cows to the Aubrac plateau. On this occasion, you will be able to watch the show of the passage of flocks adorned with flowers, feathers and ribbons and enjoy the numerous animations.
From May to October, you can go to the buron de Camejane, the only buron in Aubrac where cheese is still made the old-fashioned way. There, you can buy tomatoes and cheese from Laguiole.
